will the classes look different for each race?

No but there will be race specific items and you can make your char totally individual as you can see all items on your char at the paperdoll which lets you create totally individual looking chars. You can also choose hair and beard + color.

The Mage seems a bit too much like death, however will each class be limited to a certain items?

Not complelty, but some items are limited to races / classes.
